These heirloom varietals of beans are grown on Mormora Farm's 200 hectares, then hand-picked to remove any defective bean. These beans are dried in direct sunlight on raised beds for a natural process. To encourage even drying, the cherries are frequently stirred during the three week drying time. Due to the natural semi-forest canopy, the beans are grown in shade at an altitude of 1900-2000, given them diverse flavor profiles and unlike any other beans grown in the area. The cupping score of these delicious beans is 87 and roast recommendation is light or medium.
