We are thrilled to bring you our very first honey processed beans! These beans come from the Beneficio San Diego mill in Costa Rica, which was established in 1888 and has been proccessing beans ever since. It specializes in beans from the Tarrazu and Tres Rios regions and has taken a leading role in working with coffee farmers to ensure sustainable production and fair treatment to all involved in the coffee-growing process.
The honey process actually was invented in Costa Rica and now has spread to other Central American countries. The coffee "honey" (some or all of the mucilage of the coffee cherry) is left on during the drying stage, giving the coffee an extra sweetness. The beans are slowly dried on African beds or patios to allow for an even taste. Only top-quality beans are selected during harvest, based on the cherry's ripeness and farming conditions. Due to the complex process, each honey-processed coffee has a unique flavor.
